In the midst of our wintry weather here in Winnipeg, I’m sure many of you are dreamin’ of lounging on warm sandy beaches, while sipping tropical drinks from a coconut!

If pina coladas or tropical destinations are all that come to mind, when you think of coconuts, you’d be surprised by the variety of uses, and health benefits this amazing fruit has to offer!

Choosing Coconut Flour is an excellent option, when looking to replace your over processed, refined white flour. Coconut flour is gluten-free, and therefore does not trigger an inflammatory response in the body. It contains just as much protein as wheat flour, but without the gluten protein. It is harvested by slicing the bud of the coconut tree flowers to release the coconut nectar. The nectar is then boiled into a thick caramel and dried into crystals. Nothing is removed during this process. Coconut Sugar has a similar taste to brown sugar, but with a hint of caramel. It has a high mineral content of magnesium, zinc, iron, and potassium. It is also low on the glycemic index (35).
