New Year’s Day Cleanse

Hope you all had a fabulous night ringing in the New Year! I’m feeling lethargic, but excited to Juice!

I’m turning to my Juicing Bible for today’s breakfast drink, which is now closer to noon. If you have a chance to check out Pat Crocker’s book they are amazing. She spends the first few sections explaining about fruit and veg, herbs and spices and all their qualities and healing properties.

A quick overview of my detox, I’m cutting out all gluten, dairy, sugar (including artificial sugars), caffeine, soy, processed foods, peanuts, pecans and cashews, meat and eggs, and Alcohol.  You can have salmon and chicken, but I’m a vegetarian, so I won’t be including those.

Since it was New Year’s Eve I am doing a liver friendly juice. I also have decided to jump head first in and make my first juice an all green juice.

2 Handfuls of Spinach

1 handful of Kale

2 Celery Stalks

Cucumber

Parsley

I am surprisingly nervous to try this green beverage, I have to keep reminding myself that V8 is not the same as freshly juiced produce.

As for the rest of my meals I will be enjoying a Mandarin Spinach salad, with toasted almonds and a parsley vinaigrette.  And for dinner a homemade Butternut Squash soup.  For this I just roast a handful of garlic cloves with the squash at 450 Fahrenheit for about 45 minutes.  While that’s in I make a batch of vegetable stock, you can do this with your veggie cubes, or sauté some onions and garlic and use leftover veggie stalks, and spices.  Bring to a simmer and remove from heat.  I then throw the squash, garlic in a food processor and slowly add the liquid (I usually make about 6 cups of stock and add 1 cup at a time).  Put back in large pot and bring to a boil and then let simmer, making sure to stir constantly.  Add pepper to taste.

During the day load up on veggies, you can dip them in humus for added protein and energy.  And make sure you’re drinking LOTS of water throughout the day.

I’ll post this week and next week’s recipes tomorrow as well as a more detailed info, but for now I’m off to juice, and maybe, probably, go back to bed.
