Quinoa Brownies!

The Pengelly’s from Tamarak Farms have sent us this amazing brownie recipe using their organic, Manitoba grown quinoa!  Be sure to check out their website for more recipe ideas using quinoa.


Quinoa Brownies

1 cup quinoa flour

2/3 cup cocoa powder

1 tsp baking powder

1/2 tsp salt
3/4 cups sugar (or equivalent amount of non-sugar sweetener such as stevia)
4 large (flax) eggs
1 cup unsalted butter or coconut oil, melted

1 tbsp vanilla extract

1 cup coconut or dairy milk


Cooking Instructions:
Preheat oven to 350F. Mix all dry ingredients in a large bowl. Beat eggs in a separate bowl and add the melted oil, vanilla extract, and milk. Add the wet ingredients to the dry ingredients and mix in until a smooth consistency. Pour into an oiled baking pan. Cook the brownie for approximately 26 minutes. Every oven is slightly different so make sure to use the “toothpick test”. At about 24 minutes poke the middle of the brownie with a toothpick and remove. If the toothpick has some brownie stuck to it, let cook for a few more minutes. If the toothpick is clear, the brownie is ready.  Enjoy!
